It was absolute crapola! Too hard!<br \/>\n\tI nearly broke my tooth (although I was good humored enough to enjoy a<br \/>\n\tchuckle at the thought that you put up a hoax crust recipe on your blog and<br \/>\n\tI fell for it). Seriously, I thought I was eating the pizza<br \/>\n\tstone&#8211;munching away on ham-n-mushroom smothered rocks. You should have said<br \/>\n\t&quot;The Dough Is Now Ready to Repave a Chuckhole&quot; or something.<\/p>\n<p>Never again,<\/p>\n<p>Gullible in San Diego, Calif.<\/p>\n<\/blockquote>\n<p><!--more--><\/p>\n<p>Wow. I feel terrible. So I have responded (most EWM mail goes directly<br \/>\nto recycling or goes the way of DEL).<\/p>\n<blockquote>\n<p>Dear G.,<\/p>\n<p>Another month of experimenting with the dough has, in fact, revealed to me<br \/>\nthat I was cooking it for too long. Nearly 10 minutes too long! The<br \/>\namended recipe is below (a variation on<br \/>\n<a href=\"http:\/\/pizzatherapy.com\/dough.htm\">this<\/a>). And I have enclosed<br \/>\na pack of Trident to relieve your ailing mouth parts.<\/p>\n<p>2 tsp. sugar<br \/>\n\t2 packets of yeast<br \/>\n\t1 1\/2 cups water (warm to touch; appr. 100-110 F)<\/p>\n<p>2 cups whole wheat flour<br \/>\n\t2 cups all purpose flour<br \/>\n\t1\/3 c. olive oil<br \/>\n\t1 teaspoon salt<br \/>\n\tAdd spices, if you want to: garlic powder or whatever.<\/p>\n<p>Pour half of the water into a glass or bowl with the sugar and yeast.<br \/>\n\tStir. Allow the yeast five minutes to activate. The yeast-sugar<br \/>\n\tmixture should be foamy when you combine it with all of the other<br \/>\n\tingredients in a food processor. Mix all ingredients for a couple of<br \/>\n\tminutes in the food processor. Everything should gather together in<br \/>\n\tthis process, forming a mass. Remove the mass (i.e. dough ball) from<br \/>\n\tthe processor and knead it by hand 20-30 times. Put it into a bowl,<br \/>\n\tcoat the ball with olive oil, cover the bowl with a towel. After one<br \/>\n\thour, punch it down. After a second hour (or 45 mins), it&#8217;s ready to<br \/>\n\troll out. Makes two pizzas.<\/p>\n<p>Heat the oven to 450F. Split the dough ball into equal parts and roll<br \/>\n\tflat (always rolling from the center, unless your skilled with the toss). Dust the sheet or stone with corn<br \/>\n\tflour to prevent sticking, then place the rolled\/tossed dough. Cover with<br \/>\n\ttoppings.
